Fried Eggs in Bell Pepper Rings


I love Sundays.  On Sundays, Doug and I have lunch at my gramma's house with my mom, stepdad, aunt and uncle and then we go to Doug's parent's house in the evening for dinner.  It's a day full of food and family and I love it.

Mom and I share a love of eggs.  Eggs for breakfast, lunch, dinner, or for anytime of the day.  For brunch this Sunday, she made a fun, really colorful and delicious egg fried inside a bell pepper ring. 





This meal was like a veggie omelet with canadian bacon, but amped up in the aesthetics department.  

She melted cheese on the egg and topped it with avocado, onion, a slice of tomato and canadian bacon.  I like my egg yolks runny, but mom cooked hers a little longer for a hard yolk.  She even makes a few extras in the morning and sticks them in tupperware to reheat during the week for lunch.


Fried Eggs in Bell Pepper Rings
8 eggs
  • 2 bell peppers - sliced into 3/4 inch width rings
  • 8 eggs
  • 1 cup shredded cheddar cheese
  • 1 avocado sliced
  • 1 large tomato - 8 slices
  • 1/2 onion - diced
  • 8 slices canadian bacon
Add oil or butter to a large nonstick pan over medium-high heat.  Lay the pepper rings into the pan and sear on one side.  Flip the rings over and turn the heat down to medium.  Crack one egg into the center of each pepper.  Salt and pepper the egg.  After 2-3 minutes, slide a spatula under the egg and pepper and flip it over in the pan.  Sprinkle cheese on top of the egg.  Cook another 2-3 minutes.

Once you remove the egg from the pan, stack your avocado, tomato, onion and bacon.
